I really like this whole baking without eggs thing. Plus I have this soy yogurt I bought for some other recipes. And plain soy yogurt is not really something I want to eat by itself. This was my first attempt at making substitutions for eggs, but I think it turned out pretty darn good if I do say so myself. 2 very ripe bananas 1/2 cup applesauce 2 tbsp. melted Earth Balance shortening or margarine 1 tsp. vanilla 1/4 cup soy yogurt 4 tsp. vanilla almond (or soy) milk 3/4 cup all purpose flour 3/4 cup wheat flour 1/2 cup sugar 1/4 cup old-fashioned oats (NOT quick-cooking...

I am really getting big into the Fat Free Vegan Kitchen.  Part of it is that the whole Vegan lifestyle really intrigues me.  The other is that she really tests things out like measurements and substitutions and gets them just the way she wants them, less fat and all.  It also may be that I am trying to get rid of this food baby that I developed over Christmas (even though I never stopped exercising, doggonit).  Anywho, I decided to try another recipe of hers the other night.  I went by her exact recipe first...and then added some...

Vegetarian Memoirs: Ethiopian-Inspired Lentil Stew

I tried this tonight, and it is DELICIOUS. The spices really make this, so try not to leave too many out. Red lentils have become my new favorite protein source, but you could use regular ones and this would be just as tasty. My official review of this is a 5 out of 5 because it was a one pot meal, it was full of flavor, and it was low in fat. I added carrots because I had some from the organic produce store, and I thought they would be good. They were. If you don't...

I ate meat 3 times this week.  Each was disappointing, and I was uncomfortable and gross-feeling for at least 3-4 hours afterward (which is why I remember exactly how many times I consumed meat).  Now, granted, this was cafeteria and restaurant meat--ham sandwich, taco salad, and hot wing-style tenders (oh gah I love hot wing sauce). Since I've been "flirting" with this idea for quite some time now, I'm just going to do it.  I'm going vegetarian for a month.  I don't think will be difficult at all.  We already don't eat meat for dinner, so I'll just have to plan...

...until I took a huge bite of that oatmeal with wheat germ and HONEY.  I've been writing this eloquent blog about my southern family and our food habits and all this stuff.  I looked at it this morning after my vegan blunder and decided to just get to the point without all the story.  Perhaps I'll post it later.  This is basically what it boils down to:  I saw Oprah on Wednesday.  She had Michael Pollan, the Chipotle founder dude, and Alicia Silverstone on the show.  Michael Pollan was talking about his latest book, Food Rules, and the movie Food,...
