Noodle Adventures: Grilled Tilapia and Stir Fry with Black Bean Sauce

Look at the texture on those rice noodles!

I love rice noodles. They’re so light and fluffy and take mere minutes to fully cook. Since we had rather bad weather yesterday afternoon, I picked my dinner options according to my pantry. I knew we would be having tilapia because Thursdays have kind of become our unofficial fish dinner night, and I had planned accordingly in this week’s shopping trip. Tilapia is always an easy and budget-friendly protein to have around, and these babies were HUGE!

So the 3 easy parts to this meal:

  1. Grilled Tilapia: brushed with olive oil, sprinkled with my favorite seasoning mix, coarse salt, and lemon zest. I grilled it on my old George Foreman from college. I would not recommend grilling this on an outside grill even if you have a fish grilling basket contraption. Tilapia is extra flaky.

    Tilapia is extra delicate. I had WAY more than I photographed, let me tell you.

  2. Stir Fry: bag of our favorite frozen stir-fry medley prepared according to the package instructions with olive oil. I added 3 tbsp of Kikkoman black bean sauce with garlic that I had just waiting to be used in our pantry. I got it from the Asian food section of the grocery store.

    Kikkoman Black Bean Sauce with Garlic is extra tasty...and full of sodium.

    I knew I had to try this type of sauce when Danielle over at D is for Delicate made a garlic spinach stir fry. My jar said to use 3 tbsp. It is really tasty. Unfortunately, I did not read the nutrition information until we were eating. This Kikkoman version uses salt and soy sauce, tipping the sodium content up there at almost half the daily value. I’m thinking I might make my own version of black bean sauce and mix this with it to lessen the sodium up a bit next time. Yikes.

  3. Rice Noodles: angel hair version, thrown in boiling water for 3 minutes.

*If I were you, I would toss my rice noodles in with the stir fry so that they can soak up all the saucy flavor.

    Yummy!! This looks so delicious! I’m still not so big on the fish, although since you guys came to Seattle I cannot eat enough crab haha. I might try this with some chicken or something.

      you might be surprised by tilapia, especially if you season it just right. tilapia is a very mild, go-with-anything type of fish. and adding lemon juice after cooking always helps. also, i love that we got you hooked on crab!
