Neighborly Hot Dog Relish

My parents recently moved to a very small town in Tennessee, and they really love their new neighbors. They hang out a lot, and to mom’s retirement delight, they share recipes. This one is from quite a lady. She and her husband keep a beautiful property, one that Joe and I first noticed as the “Gingerbread House.” They have all sorts of recycled things as yard decorations. Their back yard also boasts a wonderful little babbling brook. I am very appreciative that she shared this wonderful recipe with my mom, especially since mom has made this for us several times. It makes for a pretty canned gift (with its mustardy yellow color) and an easy meal of hot dogs (beef, turkey, and vegetarian). I never really was a big hot dog eater, but this stuff makes them irresistible.

Neighborly Hot Dog Relish

Wash and shred 2 heads of cabbage or use 4 bags of shredded cabbage from Wal Mart.
Wash and shred 2 large bell peppers, 3 large onions, and 3 large carrots.
Place all vegetables in a large stainless steel pot.
Add 2 cups vinegar, 4 ½ cups sugar, 4 ½ cups of mustard, 1 tablespoon salt, 1 teaspoon black pepper, ½ teaspoon cayenne (red powder) pepper

Stir and bring to a boil over low heat, stirring constantly. Cook for an hour or more until all vegetables are done. Place in sterile jars. Let seal. You may place in hot bath if desired for canning purposes.

Refrigerate after opening.

*Note: I have been trying to get a picture of this beautiful stuff in a jar, but it has just not worked out that way.  Seeing as how most of you who are looking at this already received some for Christmas, you already know what it is and what it looks like.  So no more waiting!  This is the recipe.

    We were lucky enough to be the recipients of some of this relish since your mom gifted us with a jar. We hardly ever eat hot dogs, but bought some to try out the relish. As soon as
    I tasted it, I knew that I wanted the recipe. It is sooooo delicious!!! Thanks!

      you are so welcome! i put it in my chicken salad a few weeks ago and with some tuna fish last week, and it was good with both.
